It has been shown that ozone application improves the storage quality of meat, causes a decrease in the number of aerobic, mesophilic bacteria, coliform bacteria and sulfite-reducing anaerobic bacteria that cause spoilage, and extends the shelf life of meat. Ozone gas has an antimicrobial effect against bacteria, mold, yeast, parasites and viruses even when used in low concentrations and when the contact time is short. It is understood that when the ozonization time is increased and the pH and temperature are reduced, a more effective inactivation is achieved, and that ozone facilitates lipid oxidation but does not change the sensory characteristics, does not cause the carcass to lose its color and does not produce an undesirable odor, and extends the shelf life.
